Here is the deal … if we do not eat color, we are not healthy. I’m not going to preach, because that is BORING … but … what if … food that was good for you tasted good?

Here is my take on a bright spring soup …

One entire bulb of celery

Better than bullion Chicken



Garlic Powder

White Pepper

Remove core and stems of celery and wash throughly and then rough chop.

Add a teaspoon of olive oil to a large stock pot.

When oil is ready add chopped celery.

While the celery is sweating put a large tablespoon of Chicken Better than Boullion into a four cut or five cut measuring cup with that much water and microwave for five minutes.

Stir your celery and spices until the broth is ready and pour over celery.

Boil, covered until celery is completely tender.

Add 1/4 to 1/2 cup of fat free milk

Add as much fresh baby spinach as you would like

Let it all cook down for about fifteen minutes and the use the immersion blender to puree all ingredients into a bright and lovely soup which is filling and virtually calorie free.
